My favorite recipes from Forks Over Knives

Forks Over Knives is not only a documentary that changed the health and lives of millions of people. It is also a website and resource for some of the most healthy, yet delicious recipes.

They are all oil free, low fat and packed with all the nutrients we need to live a healthy life.

Below are a few of my favourites for breakfast, lunch, dinner & snacks.

Breakfast

Banana pancakes

What I love about this recipe:

  • Minimal ingredients
  • Easy to make & eat for breakfast, lunch or dinner
  • No artificial ingredients that come with the pre-made pancake mixes

Some tips:

  • For egg replacer I use 1 tablespoon of ground flaxseeds
  • Normal water can replace the sparkling water
  • For a gluten-free flour try chickpea flour!
  • I also enjoy adding some ground spices to the mix for some extra flavour such as cinnamon, cacao or ginger

Banana Almond Granola

What I love about this recipe:

  • Low-fat granola is very rare to find store bought
  • It can be made and stored in the fridge to have for the whole week
  • Swap the almonds for cashews or walnuts for a bit of variety

Some tips:

  • You can swap the banana for apple
  • Add some almond or soy milk for a delicious breakfast
  • Sprinkle with cinnamon for an even better taste

Garlic Hash Browns with Kale

What I love about this recipe:

  • It makes fried hash browns go to shame
  • It’s so simple and easy to make
  • The kids will love it too

Some tips:

  • Swap potato for red or purple sweet potato
  • Sprinkle with nutritional yeast when serving
    I enjoy mine with some mustard and ketchup

Lunch

South Western Potato bowl

What I love about this recipe:

  • Will be a winner at a picnic or Sunday lunch
  • You can get the ingredients at any grocery store
  •  Gives you healthy taste of the Mid-West

Some tips:

  • Add a mix of potato and sweet potato for extra flavour
  • Fresh raw corn tastes better than canned corn kernels
  • Make sure you add the hot sauce!

Roasted Buckwheat Salad

What I love about this recipe:

  • You realise how diverse buckwheat is as a grain
  • The recipe can serve the whole family as a main dish

Some tips:

  • Buckwheat can be swapped for millet or quinoa if it’s hard to source
  • Adding some red onion can add a little extra flavour
  • Hummus is a great condiment to mix in

Vegetable ceviche

What I love about this recipe:

  • You can never go wrong with Mexican food
  • The perfect Sunday lunch dish
  • You can serve this to your seafood eating friends and they will be asking for more!

Some tips:

  • If you are adventurous you can make your own oil free tortilla chips
  • You can swap tortilla chips for lettuce leaves
  • Adding some hot sauce will make you a more authentic Mexican

Dinner

Chickpea crust pizza

What I love about this recipe:

  • Gluten free
  • Low fat
  • A great dish for people transitioning to a plant based diet

Some tips:

  • Mix up the toppings – I love adding mushrooms to mine
  • You can add some dairy free cheese – daiya is the best brand
  • Buckwheat flour is another gluten free flour to try

Stuffed squash or pumpkin

What I love about this recipe:

  • Perfect dish for winter
  • This recipe has a youtube video
  • The filling can be made in a batch for weekly lunches or dinners

Some tips:

  • Americans call pumpkin squash for the Aussies – try different kinds that are at your local grocery store
  • You can swap the quinoa for beans
  • Try brown rice or millet too for more grain variety

Spicy French fries

What I love about this recipe:

  • Who can say no to oil-free fries
  • The spices make the flavour
  • Again the kids will love these for dinner with a side of green veggies

Some tips:

  • Steam some veggies to go alongside the fries
  • Mustard and ketchup are my favourite sauces – try mixing them together
  • Sweet potatoes are always a good alternate to white potatoes

Snacks

Roasted chickpeas

What I love about this recipe:

  • You can take these chickpeas anywhere in a zip locked bag
  • Pack these in your kids lunch boxes and they will be asking for more
  • Great game night snack

Some tips:

  • Store them in an air tight jar or container to save for later
  • Can try this with kidney beans too – tastes totally different, but still delicious

Chocolate banana ice-cream

What I love about this recipe:

  • There are only 2 ingredients!
  • 2 ingredients!
  • Did I mention only 2 ingredients…and the taste is heavenly!

Some tips:

  • Make sure the bananas are super ripe before you freeze them (and remove the skin first)
  • You can make it 3 ingredients and add a drop of pure vanilla essence too
  • Make it fresh – refrozen banana icecream will have to defrost before you can dig your spoon into it

Raw chocolate bites

What I love about this recipe:

  • They are raw and low fat
  • They are the perfect pre or post exercise snack
  • Make a weekly batch and store them in the fridge

Some tips:

  • Instead of coconut you can lightly dust them in cinnamon
  • Make sure your hands are wet when you roll the balls so you don’t stick to them
  • Serve as a dessert with some of the chocolate banana ice cream
